We are traveling to Sorrento from Venice on August 11th. We were looking to see if there was an early train we could take like at 3 - 5 am or something like that. I am not sure if that is possible. And the rail sites I have gone to are confusing when entering time, etc. Any ideas on the best most direct way to get to Sorrento. And the most recommended rail and or ferry solutions.
In view of the distance, the fastest option is to fly to Naples, then take the direct airporter bus from Naples Airport to Sorrento

Your other option is the take the fast Trenitalia AV train at 6:27 a.m., which arrives in Naples at 11:25 a.m. after a short connection at Roma Termini.
The flight might actually cost less than the AV trains (but carefully watch baggage weight limitations)!!!
There are two more train options, both of which will save you the cost of a night in a hotel.
Take the direct Venezia Santa Lucia-Napoli Centrale night train, departing at 23:30 and arriving at 10:00. Take the Circumvesuviana commuter train from Napoli Centrale to Sorrento.
Take the direct night train as far as Roma Tiburtina, arriving at 06:56. Make your way to Roma Termini and take a EuroStar Italia train to Napoli Centrale, departing at 07:35 and arriving at 08:45. Take the Circumvesuviana to Sorrento.
2 would be fairly expensive and you would only gain 1hr15min over #1. Of the two, I'd go with #1.

The eurostar takes about 5 hours to reach Naples and I think the first one of the day leaves around 6:30. From Naples to Sorrento it is another hour on the circumvesuviana. Looking into some of the low cost airlines might make sense. Although if you add in the time for security, checking baggage (if you are not carrying on), and travel from the airport to the train station in naples it may not save you much time and it might cost more.
One question I have with regard to your post is what your overall itinerary looks like? Why the long jump from Venice to Sorrento? There is lots to see in between and you could work your way down to Sorrento.
