Hi- We arrive in Venice for 5 days on our own and are looking for a tour that would take us from Venice to Vienna, Prague and on to Amsterdam and any stops in between of interest. I'm wondering too if RS offers travel for 2 that they arrange the transport and accommodation and we are either on our own in cities or with an RS guide? TY for any advice or information.

The sort of semi-independent tour I think you're looking for would be what RS calls his "My Way" tours (your accommodations and transport between locations are arranged for you, otherwise you're on your own) and unfortunately they don't offer an option that would check your desired boxes. They don't otherwise make booking arrangements for people traveling independently.
