We are looking into assembling our family (3 couples and a single—all 50+ years) for a week in late April-early May 2023. Has anyone on the Forum rented a similar apartment in the area? We’d like to stay under $300 a night if possible, don’t require parking.
I’d start with booking.com and VRBO, use the filters
With that many people I’d want 2 bathrooms

I agree with Christine- VRBO is a great place to start. I’ve not used them, but your post tempted a try. I plugged in some dates this September for 7 people and there were many available, some under $300 even! These listed 3-4 bedrooms and 2-3 bathrooms. Living spaces looked large and comfortable.
Do be careful about the beds. I've seen lots of places with people expected to sleep on convertible sofa-beds, futons and the like--anything to get the bed-count higher.
acraven, I was just about to caution the same! Lots of rentals come up with # of people they claim to be able to accommodate by sleeping people on pullouts in shared living rooms or on multiple beds within shared bedrooms. Be careful of extra costs as well, such as cleaning, extra-person fees, etc. They'll likely have a per-person, per-night tourist city tax as well, and may ask for in cash. This is not an illegal charge; it has been requested at hotels we've stayed at as well.
I've found good vacation rentals in Rome on the websites Rental in Rome, RomeLoft and From Rome to Home.
Unless you are all very, very, very good friends, I'd look for a bedroom for each couple and at least two bathrooms. It's nice to have the separation. Be conscious that the single person will want their own space, too. My extended family does a lot of group rentals of VRBOs/Airbnbs. I can't tell you how many times, as the single person on a trip, I'm put in the bunkbed room. It's okay but the general opinion seems to be that if you're not part of a couple, you will be A-OK with a narrow twin bed but will still pay your portion. Just a thought....
