Our flight arrives at Venice airport at 11:30 at night. My wife and I are 80 years young! Want to be certain we get to hotel without hassle. Thinking to have the hotel arrange a water taxi (costly I know) to meet us at airport dock---sound OK?

If the hotel will do it, I see no problem.
The hotel has front desk staff that late so you can check in?

Yep, sounds okay (and a good plan). That is a very late arrival....hope you can sleep a little bit extra the next morning.

Just remember that it is a fair old hike down to the dock at the airport. It will probably be even further at midnight.

Maybe more convenient for you is to taxi from airport to piazzale Roma and meet up with the water taxi from there. As Nigel said, it’s a fairly long walk from the airport arrival hall to the water taxis...although at least now it’s all an inside walk. It used to be an outside walk.

You will first need to make sure your hotel has 24 hour desk or somebody to check you in at that late hour. I'd guess not there til pretty close to 2 AM.
If not- your option is to get a hotel near airport that first night- then make your way to Venice in the am.
Keep in mind- a water taxi will only get you as close to your hotel as possible. If your hotel doesn't have a dock or is not on a canal then you will still have to walk to get to it. That might be a bit dicey late at night! Not unsafe- just difficult as it is so easy to get lost in Venice even in the day time. There will likely be bridges and steps to deal with while you are dragging your luggage.
If you could share your hotel/address we can help determine how easy it would be to get to.
Where are you flying in from? Will you have checked baggage?
The walk from airport to dock is a bit long but actually easy as it is now mostly moving sidewalks and is under cover.
