We'll be arriving at Stazione Lucca and heading to Agricola Biological Nico about 30 minutes by car from the train. any idea on cost for taxi or Uber, or other options?
If you go to a transfer service, they can provide an estimate. But how will you get around while there? If you are staying put on the farm, it won't matter I guess, but it says they serve breakfast and dinner--what about lunch? I would definitely inquire with the accommodation first, as they will be the best source of information and may even have a driver to recommend.
If you decide that you need a car, there is a Hertz station a very short walk from the Lucca town center, about 2km from the train station.

We rented from the Hertz at Lucca. It is just outside the western gate to the city. We drove to Siena for overnight at an agriturismo near town, and then returned the car at the Pisa airport with no extra drop off fee. Then caught the transfer to Pisa Centrale and resumed our journey by train. Easy-peasy.
Perhaps ask your hosts at the farm if they can arrange pickup for you?
