From reading the other posts on trains, it looks like a new schedule for trains appears in June. I am traveling toward the end of July from Venice to Rome and then from Florence to Rome. How soon will I be able to buy tickets from Trenitalia?

The semi-annual train timetable change throughout Europe goes into effect on 9 June. For your routes the new times are likely to be virtually identical to the current ones so you can do your planning now. Normally you can book high-speed trains (like Venice-Rome and Florence-Rome) up to 120 days in advance on trenitalia.com. However, Trenitalia usually is pokey about uploading their new timetables. I suggest that you check the site once a week and book as soon as they appear. That way you should be able to get Super Economy fares which sell out quickly.
