My family & I will visiting Italy in September. One portion of our trip will require us to travel from our hotel in Rome up to our Airbnb in Monterosso in CQ. We plan on leaving early am to arrive in Monterosso as early as possible. Any tips on making it the most efficient travel day?

Bring your own food and wine, the stuff that Trenitalia sells on its trains is not edible by humans.
Have you already checked schedules and prices on trenitalia.com/en.html ? Select an early hour of departure and pick "Roma (tutte le stazioni)" as departure station from the drop-down menu.

Book your train tickets on trenitalia.com at your desired time, and choose the fastest route which involves a freccia (high speed train) from Roma to La Spezia Centrale with a change to a Regional train to Monterosso.

Makes no sense to get to Monterosso early if you don't have access to your apartment, so make sure you confirm what time you can check in. Like a PP stated you will need to transfer in La Spezia Centrale. Look on The website Rome to Rio to see your train solutions which will show the shortest route and prices. Then purchase the actual train tickets on the Trenitalia website.
