Please recommend the best website in which to book the following:
Rome to Lucca (via Florence)
Lucca to Florence
Florence to Monterosso, Cinque Terre
Monterosso to Venice (via Milan or Florence)
We are not flexible in dates/times and want to book and pay from home (Canada).

You will need to choose the train stations in Italian, when using the Trenitalia website, such as:
- Rome = Roma Termini
- Florence= Firenze S.M. Novella
- Monterosso = Monterosso
- Venice = Venezia S. Lucia

Don't book Lucca to Florence. That segment is entirely on Regional trains. Regional trains are best bought at the station when you go. There is no advantage in prepurchasing regional tickets, as no discounts apply to those trains.
