We are scheduled to arrive at Malpensa (May 2018) at 2:55 pm (14:55) on a Thursday. We want to travel from there by train to Monterosso. Can we expect to arrive at a reserved hotel in the old town before it might typically close? Is it safer/better to travel to Genoa and stay the night before going on to Monterosso?

Last chance for the day departs the airport shortly after 5.30pm. There is a great option at 16:37, with just one change.
I don't see any need to stay over in Genoa, unless you have some interest in exploring the city itself. Or unless you don't want to arrive late in Monterosso. I wouldn't worry about a hotel being closed - you should get into Monterosso surely by 8PM or so, maybe earlier. Monterosso is not a tiny town.
Travel time from the airport to Monterosso by train is at least 4h15min.
If you land at 3pm, making it by 8pm, as Andrew predicts, would be rather impressive since you would need to catch the train departing 20 min after you land.
However if you can catch the 4:37pm departure from Malpensa, you can make it shortly after 9pm, which is rather good.
