We will be traveling from Venice to Cinque Terre by train. do we go through Florence, Milan or where?

Either----it's about 6.5 hours at best either way. You can view the routes and schedules at www.sbb.ch. This is the Swiss train website, but it shows trains for Italy too, and I find it much easier to use than the Trenitalia site.

Either is correct. However, most runs will take you have you take a regional train out to Venezia Mestre to pick up a Eurostar and then it will route you through to Florence where you will change trains again. And, you will change trains again in Pisa and again in La Spezia to get into the CT. Yes, you change trains a lot but it's not really as bad as it sounds. It's just the way it works in Italy. Very few runs go through Milan. If you work with the schedule, you could go through Bologna and miss both Florence and Milan. Where are you staying and what time do you intend to depart Venice?
