I do not like to travel by bus, I want to travel by train from Catania to Palermo. I am trying to look up for train schedules for mid-July on Trenitalia website, Deutsche Bahn and Rail Europe websites but not finding train schedules. Please advise.

Wait for June 12, then check the schedules again on trenitalia.com . Re-sellers (raileurope) and competitors (DB) can't upload Trenitalia's summer timetables before Trenitalia.
Otherwise put any day before the 12th to get an idea of the level of service and then wait for June 12 to buy your tickets. Most of the trains between Catania and Palermo have no reserved seats and can't sell out.
