Train Tickets - Purchase in Advance?

Question: I'm willing to pay a few more dollars and purchase my train ticket on a walk up basis instead of in advance.

This will give my party of 4 people maximum flexibility when deciding what time to board a particular train line.

My big question is this: Should I be overly concerned with the trains selling out completely and me left without room to get on?

Thoughts?

Do Italian trains book up to capacity often?

The travel legs that would be train are: Venice to Bologna/Ravenna
Ravenna to Siena and Siena to Sorrento

No, you need not be particularly concerned about trains selling out. To get 4 people seated together, though, you may need to book a few days ahead or, on shorter notice, to choose one of the mid-range price/seating categories.
