Really have only two choices --- trenitalia and Italo. Trenitalia is the national rail company of Italy and operate trains to nearly everywhere in Italy. Italo is a private train company using Trenitalia's rail lines to provide high speed trains to a limited of big cities in Italy.

If you want to use a third party booking site --- not recommended. Try trainline.

Italo trains don't serve Orvieto so your only choice between Orvieto and Florence (Firenze SMN) is Trenitalia. Firenze SMN is the central station in Florence.
