I know I have to change trains at Naples to get to Sorrento. Will I just have

Technically, there are two train stations involved, but they are part of the same site (one is overground, other is underground, internally linked).

Watch out for pickpockets and young people rushing you to get on the train! Take the ferry, much more fun and safe!
It's virtually only one since it's one station on top of the other. When you alight the train at Napoli Centrale look for signs to the Circumvesuviana. Buy tickets at the Circumvesuviana ticket window then descend underground to catch your Circumvesuviana commuter train to Sorrento.
The ferry option suggested above might be a nice alternative, but it will involve getting out of the station, then catching a bus or taxi to the port (ferries dock at Molo Beverello, i.e. Pier Beverello). Also that option won't necessarily mean you will avoid hustlers trying to sell you some service (like a ride or carrying your luggage for a fee) or beg for spare change, or just scam you. Just be on the look out in Naples. Naples is like New York on steroids.
The station you want for the Circumvesuviana from Naples to Sorrento is Garibaldi. iI is connected to Napoli Centrale, and as advised, just follow the signs.

I'd like to second the point mentioned in a previous reply. Be sure to watch your luggage and be vigilant for pickpockets, especially on the train.
Note that the Circumvesuviana has several routes, and Sorrento is the last stop on that line.
