I am going to be in Italy in late December. I noticed that on Trenitalia that the schedule is priced much higher from December 17th onward versus the middle of the month. Is that just the demand pricing, or are the schedules not released yet. I noticed I cannot book the various different types of fares. I am looking at the Florence to Rome one way trains.

Prices generally change on Jan 1 and Jul 1 and are based on the ISTAT inflation factor, so, assuming they increase on Jan 1, there shouldn't increase more than 2-3% from now.
Check the schedules and prices in the next week or so. You'll be able to buy ahead 60 to 90 days before the travel date, then as you get closer to the actual date, the discounted fares will be gone (The full "Base" fare always stays the same).
