In Rick Steves guide, he states that trains from Orvieto to Rome run roughly hourly. When I consult the Trenitalia and Rail Europe websites, however, they only list departure times as 5:00 AM, 12:10, 2:10, 7:28, and 8:10. Obviously I am not understanding something. Can someone point me in the right direction for a full schedule of departures from Orvieto to Rome. Our planned departure date is June 14.
First, don't use rail europe. They won't list all the trains and will charge more.
Use the official trenitalia website:

Use a date within a week of today to see all the trains. This will give you a good idea of the schedule and costs. You are looking too far in advance and it's not showing you the regional trains that will be available. There is a schedule change mid June (they won't change much so don't worry about that) so they haven't loaded the entire schedule. The regional schedules are the last to be loaded. Just check dates within a week of now and you'll see what will be available.

As previously mentioned, stay away from Rail Europe if you want accurate advice on schedules. You can find information using either Trenitalia or Bahn.de.
Part of the problem could be that you're searching more than a week in advance, as Regionale trains won't be shown if that's the case. Pick a date within the next week and that should provide a good "ballpark figure". I checked for departures next Tuesday, and there are numerous departures using a combination of Regionale, InterCity and Bus transport. Fares range from about €7.50-9.00 PP.
June 14 is the first day of the new summer schedule, so full schedules are not yet published. Look at an earlier Sunday for a good idea of options. DeutscheBahn schedules do not sell tickets, but give you complete schedules, including regional trains, through June 13.
