We are going from Venice to Montorosso in Cinque Terre. What is the best train route to take? Is the ride scenic?

Although you're going to Monterosso, the options are the same - travel either via Milan or via Florence. Which route to choose will depend to some extent on which train and departure time you prefer to use. You can see all the solutions on the Trenitalia website. One of the easiest (least changes) is a departure from Venezia S. Lucia at 08:50, arriving Monterosso at 15:03 (time 6H:13M, one change at Milano Centrale).
I find that travel via Florence is somewhat more "scenic" and often quicker, but there will be at least one more change (which is not really a big deal). For example, you could use a departure from Venezia SL at 09:25, arriving Monterosso at 14:52 (time 5H:27M, two changes at Firenze SM Novellla and Pisa Centrale).
