Having a little trouble deciphering times and options but here is what I would like help with. Party of three seniors arriving at Florence Airport at 11:00 Am on Tuesday April 18. Would like to go to Lucca as soon as we gather check-in etc, Bus or train whatever is faster or probably easier, Then on Friday April 21 would reverse trip and would like to be at airport around 10:00 am.

Take the tramway to Firenze SM Novella station and then a train to Lucca. There are 23 direct trains each day from Florence to Lucca, Regionales with no reserved seats that can't sell out: you don't really need to look up the schedules in advance. The 12:37 and 13:09 trains usually depart from track #7 and track #4.

Buy all your tickets for the tram from the airport to Florence at once.
So you'll need two for each person as you want to buy the ones for your return too.
They are about E1.50 each.
As you are exiting the airport, on your left before the outside doors is a gift/newspaper shop.
The clerk there will sell you as many tickets as you want for the tram.
Easier than figuring out the ticket machine on the platform which can have a crowd of confused tourists around it.
Also, buying them all in advance means you don't have to look for a machine to buy them on your way to the airport on your last day.
Just stash them somewhere safe!
Remember to validate them in the little machine on board to avoid a huge fine!

There is also the bus option directly from the airport, which would be the fastest option if the bus schedule works for you.
The bus originates from downtown Florence (Piazza Vittorio Veneto near the Cascine Park), the bus stop at the airport is only an intermediate stop just before the bus enters the A11 freeway to Lucca. The bus is used by commuters a lot so there are multiple runs daily.

The bus stop is a short walking distance from the terminal, on Viale Luder, the boulevard that leads to the A11 freeway. Here is the map location:
