We are going from Milan to Venice on June 18. I have looked at Trenitalia's site and it seems there is only one train that day at 12:05 arriving at 2:40. Is this correct or am I doing something wrong? Thanks for the help!
June 18 is a Friday. If you are planning to leave Milan mid-afternoon to early evening, you should try to buy tickets the day before or that morning, to miss the (possible/likely) weekend crush.

No, train schedule change very little from time period to time period.
Right now don't look at dates that are very far out. The schedule changes in Mid June and trenitalia won't have the data loaded yet.
Just pick a day of the week in May that is the same as your real travel day. For example you want to travel on August 24 this year, a Tuesday. If you look at the August date, you'll be lucky if there is one train listed.
Search on Tuesday, May 11th. all the trains will be there. The actual times may change slightly but not much.
Most people in the US have problems purchasing tickets on the trenitalia website. It doesn't like US credit cards. Most folks advise just waiting till you arrive to get tickets.
Without checking I will bet there are at least two or three trains an hour to Venice. Also try bahn.de for schedules. Seem to be more reliable for scheduling information. But you cannot get prices there.
There are several trains hourly from Milano to Venezia. We have taken day trips leaving in the morning and catching the 9 p.m. train from Venezia to Milano. It takes about 3 hours on an ICC and faster on the Es trains.
Unless you are traveling on a holiday it will be easy to obtain rail tickets. Before you depart make sure you validate the tickets just prior to departure using the yellow box at the head of each track. Otherwise, you will be fined.
