Which train service should use use to travel from Rome to Naples - we prefer nonstop and fast train. We will probably book premium seats. I see ItaliaRail and Trenitalia. Is one better than the other?

Trenitalia operates also slower regional trains on that segment. If you want fast, you need to choose a Frecciarossa.
You can book any class of service, although I find the Standard class, perfectly acceptable, way better than Economy or even Business on a plane.
I did this on April 1 and returned April 3. I used Frecciarossa to go from Rome to Naples and back to Rome, 45Euros each way. It took 1 hour and is run by Trenitalia. Also, easy to book online.

When booking with Trenitalia (which never failed me) don't forget to use the Italian originals of placenames. It's »Roma« and »Napoli«. It's a short ride (1hr15) and hardly worth the trouble, but if you want you can choose your seating arrangement.
And I have also never felt the necessity of riding first class (or whatever they call it on modern trains). Second class on a train is not comparable with economy on a plane.
Ya, second class is like business class on an airplane. Unless it is a deal we always take second class and have never been an issue.
Did you understand that it can be non-refundable, non-changeable? That gets a lower price.
ultimately we need to get to Sorrento - is it best to hire a driver to take us from the Naples Train Station?
Always 2nd class for us as well: perfectly comfortable!
From Naples to Sorrento we've taken the cheap route and used the Circumvesuviana commuter train. It's a battered thing with no air-conditioned but runs frequently and gets the job done. If your timing works, you could take the Campania Express. It has limited runs but is a nicer train (has air), makes fewer stops, and is overall a more comfortable ride. This is a new service since last we were in the Sorrento/A.C. area, and tourists who've taken it have given it the thump up.
Both trains depart from Napoli Garibaldi, which is connected to Napoli Centrale.

You may, of course, hire a driver if it suits your budget but they've been pricier than we like to spend.
