How do I reserve seats in the train from Milan to Varenna (July 24, returning on July 27, 2018?
If it is not possible to reserve seats, how full are the trains in July?
How much time I need in Milan train station to buy the tickets to Varenna?

Not possible to reserve seats, its a Regionale.
You can buy tickets anytime at any station in Italy. When are you arriving?
You can also buy a pre-validated ticket on line showing the date of travel and planned train time. While you are at it, buy the return ticket too as there is no ticket office in Varenna station, just some local travel agent and a tabacchi (news and cigarette shop) that sell tickets.
If you arrive with your ticket 15 to 20 minutes before departure time, you can go to the platform and board as soon as it shows up on the big train board. It originates in Milan, so it will be empty until the time it is announced.
In Varenna for the return, just be there before the train arrives and find a seat as soon as it stops at the station.

Are you arriving at Milano Centrale after an international flight to MXP? Buying tickets from a Kiosk usually only takes a few minutes, assuming there isn't a queue at the Kiosk. With locally purchased tickets, you must validate the ticket prior to boarding the train on the day of travel, or risk hefty fines, which will be collected on the spot.
If you wish, you can buy tickets online at www.trainline.eu, Trenitalia or Tre Nord. The first site is the one I'd suggest as they sell tickets for a variety of rail networks in Europe. Once registered on the site, it's very easy to use.
