In looking at the rail schedule, most trains are high speed between Florence & Milan.
There is an IC 580 that has super economy tickets available. Would the scenery on this route be worth the extra 2 hours on the train?
Please advise your thoughts.

I prefer to use the high speed trains whenever possible (regardless of the cost), as that's a more efficient use of my limited travel time. IMO, the extra two hours would NOT be preferable.
The IC 580 follows a similar route as the fast trains, but it makes more stops and uses the older standard speed tracks from Bologna to Milan, rather than the exclusive high speed tracks the fast trains use. So basically, it is the same scenery at a slower speed.
Are more scenic and even slower route would be to take the regional train to Pisa and catch the IC train to Milan that goes through the Cinque Terra along the coast to Genoa, them heads over the mountains to Milan. That one is nearly 5 1/2 hours and has Supereconomy tickets for as low as 9 euro plus the 7.90 euro Florence-Pisa regional.
