In May I'll be going from C.T. to Rome via train(s). Normally, I suppose, this should be straight forward, but I'll be leaving C.T. on a Sunday morning. Would this be a problem due to reduced weekend schedules?

I wouldn't think so. You can pull up a schedule (maybe not that far out) on Trenitalia's website. I would search from La Spezia to Rome.

This shouldn't be a problem. Lots of runs. Even on Sunday. You will most likely need to take the local Regionale train from the CT towns to La Spezia Centrale to pick up the high-speeds. The high-speeds do not stop at the CT towns. Here's a link for you to review.
