Does the train from the Fiumicino airport go to any beach towns (within an hour train ride) that might be worth a visit for a day and possibly spending the night?

Trains from Fiumicino go only to Rome, but you could change there to other beach destinations. The airport itself is just a couple miles by taxi from the beach. Ostia Antica.

A slight correction: Ostia Antica is a historic site. Ostia Lido (Lido di Ostia) is the beach.
