I want to take a train from Sorrento to Rome. It looks like I have to take a Regional train to Naples, then transfer to another train station to go from Naples to Rome. Is that correct ? If so how far apart are the stations and how do you get from one to the other?

You are correct - you can take either state run Trenitalia or privately run .Italo (fast trains only) between Rome and Naples and have to switch to the Circumvesuviana local narrow gauge train to get to Sorrento.
The station for the Circumvesuviana is part of the Napoli Centrale but is essentially one level down. The ticket windows have actual people in them so you buy a ticket and head down to the platforms.

The two trains are run by different agencies, and the Circumvesuviana is unreserved, city-transit style, with really cheap tickets bought just before departure. There was one report here of tap-and-go credit card reader hardware being installed.
It is a long but level and unconfusing walk from the Circumvesuviana turnstiles to the base of the escalator to the Trenitalia station. Modern marble-tile hallway. The paid toilets are on the same lower level, the same distance beyond the lower end of the escalator. This train station is less than 20 years old, and far superior to most train stations in the USA.

EDIT: If they have not implemented tap-and-go, you can buy a preprinted Sorrento-Naples ticket at the newsstand beside the Circumvesuviana station. The station may be entirely unstaffed, and you need to Validate the ticket in a machine on the wall, before you board the train.

You will buy the Sorrento to Naples at the station in Sorrento (this is the Circumvesuviana -cost is a few euros)
For Naples to Rome you can purchase in advance online or on the app

Just as a side note, the Circumvesuviana station, that's one level down at Napoli Centrale, is called Garibaldi Station.
