Please recommend away any tours that are a MUST DO for a couple that is 30 years old!

The biggest mistake people make is to cram to much into too little time. You are making a textbook mistake.
I suggest 2 days in Venice, 2 days in Florence, 2 days in Rome.
Take the train to Napoli then the light rail to Pompeii stay overnight in the Hotel Forum, tour the ruins the next day then take the light rail to Sorrento and over to Capri. Stay in the Hotel Gatto Bianco. then the boat back to Napoli and train to Rome for departure.
You will not be disapointed.
I have been going to Italy every year for 35 years.

If this is your first time to Venice, I recommend the "Venice for Beginners " tour with Walks Inside Venice (http://www.walksinsidevenice.com/). It is an excellent introduction to the city.
I probably already suggested this in an earlier post but I highly recommend bike tours of Rome and Florence. Great way to see the city.

In Roma, get a private guide to take you through the Colosseo, Foro Romano and Palatino. He/she will make it come alive and you won't be herded around with 40 other people on headsets. Francesca Caruso ([email protected]) or Sonia Tavoletta ([email protected]) are fabulous. Plan for 3 hours, usually Euro 165.00 I think, but WELL WORTH the splurge.
Depending on when you are in Roma these two events/shows/tours are fantastic. Call for reservations. They speak English.
