Tour of Olive Making Process December in Italy

Anyone know of a tour of an old olive making site? We'd luv to see the old olive presses in action. Will be in Rome, Florence, Bologna and Ferrara December 2021. Other awesome tour suggestions welcomed as well

I hope you mean olive oil making process. Olives are grown on trees, not made.

Now the production method is different and there are igienic requirements o be followed to produce and sold olive oil, so I'm not sure if some ancient presses are still used. The most of olive oil presses are brand new and made of steel.
Near Bologna you can visit Brisighella, where there are some little producers who do the PDO Brisighella olive oil.

The steps in the process are time sensitive and the entertainment doesn't last long. When the olives are ripe, they are harvested - mostly starting in October - and it lasts maybe a month in each region. The crushing and pressing happens just after the olives are picked and it also lasts a short time. Then the oil is stored and bottled all year according to demand. In short, by December the visually interesting part is almost certainly done. Of long-term interest is an olive oil museum - there are several in Italy.
