WE will be driving through Italy and I was wondering in order to pay for the tolls, can we buy a pass or do we need to pay every single time? Do they accept credit cards or cash only?

Pay as you go. You will need coins, Euros, to pay the tolls. Work with your partner as you approach the tool to have money available
to put in the shut for the money or bills into the reader, coins work better.
Look for the "coins into the collector" sign and get into that line (usually the longest). I found using the credit card to difficult to use. Once you do it it will be like why was this a problem.

You can purchase a Viacard in various denominations at the rest stops - it works essentially a gift card. Your credit card should also work. As a previous reply mentioned, be sure to get in the correct lane for the payment method you'll be using.
You may already be aware of this, but be sure that each driver listed on the rental form has the compulsory International Driver's Permit, which is compulsory in Italy. These are used in conjunction with your home D.L. so you'll have to take both. IDP's are available at any AAA / CAA office for a small fee and are valid for one year.
