Tips for hiring a taxi in Varenna?

If you are staying at a hotel, the desk clerk can order one. At the train station, there were some waiting outside.

Also, just around the corner from the train station is a mechanic/garage. They rent vehicles there, and at a fair rate. We use them every year.
