My husband and I have scheduled a several tours during our upcoming trip to Italy, some private some very small group. They range in time from 2-3 hours to full day excursions. What is considered a respectable tip for a great guide?

Italians wouldn't tip
I would only give them something extra if they did something you felt was above and beyond like waiting additional time for you or making an otherwise unscheduled stop for you. If they did give them 20 additional Euro. Otherwise pay the stated rate, no tip.
If the tour was particularly enjoyable and well-led I usually give the equivalent of $5 as a tip. In Tallinn I had the pleasure of being led by the owner of EstAdventures for 2 delightful all day trips, each included something extra, with one day spending a good hour in a handcrafts co-op selecting yarn and knitted items so I gave a 20 euro tip each day.
For new travelers who don't know their geography, Tallinn is in the Baltics, the capitol of Estonia.
As such, Estonian tipping culture may not directly correlate to that in Italy.
