Tipping Advice for Food Tour and Day long private Tuscany Tour

I see RS has tipping advice for restaurants and taxis, but he indicated that we need to ask a local for service advice. We will be taking a Group Food Tour ($100EU) and a Private Tuscany Tour (9 hours - $660EU). Tipping advice would be appreciated.
