tipping a concierge and the cook for a private cooking lesson

Hi! Does one tip a concierge and if so how much? We are also having a private cooking lesson in the Villa that we rented. Do we tip the chef and, if so, how much?

We tipped a cook that came to our villa in Tuscany, to cook on two separate nights. It was so delicious our group asked her to return for an extra night (her meals were better than any restaurant we had eaten in) This was not a cooking lesson a but private dinner.

We had a private cooking lesson/dinner that was fabulous and I tipped the chef 20%. Tipping may not be customary there, however he went above and beyond to provide us with a once in a lifetime experience. In my opinion, tipping him was the classy thing to do.

I'm in the process of signing up for a cooking class in Italy. On the application form, it states the rate, and says that the amount does not include tips. To my eye, it looks like tips are either expected or at least welcome, which is ok with me. Am I interpreting correctly?
