timing for shops, museums, and tourist spots.

If we arrive in a smaller town, say Lucca, for example, at 5pm or thereafter, will we be disappointed because things we'd like to see and do are closed already?

That's a possibility, though in Italy, sometimes places are open later than a similar place might be in the U.S., because the store in Italy closed for a long lunch. Check the closing times for the things you would like to see or do, so you'll know what's open after 5 pm.

Most stores stay open until 8pm. Sights may close earlier.

One of the best things to do in a small town is just walk around. The RS guides have lots of self-guided walking tours. Churches are usually open.
