Timballo - Abruzzo Cooking Class

We are going to Italy for our first time in Mid May!! :)
I have researched and can't seem to find a cooking class for this special occasion dish Timballo from the Abruzzo region.
It is a very different version of lasagna having at least 13 layers of scrippelle which are very thin crepes, keeps it light.

Here are a couple of suggestions:

Abruzzo with Gusto. I'm sure Anna could organize this for you. I know her, and she specializes in food tours/food experiences and is very good at it. I've done a Pescara food tour, tasted special sweet peppers grown only in one Abruzzo town, local olive oils and wines and had some really great meals with her groups. Off for a coffee tasting excursion tomorrow. Haven't done a cooking class.

There is a quite fancy cooking school in Chieti province: Abruzzo Cibus, recommended by another expat I know. Haven't been myself, I'm happier when others cook for me ;)

Me, I just buy it prepared at the local deli from a couple of young women in the next town over ;)

Thanks kindly, Nelly. I did come across that website yesterday but she did not talk about Timballo. After your response I just emailed her to find out. Greatly appreciate your help! :)
