Staying 1 week at each of several properties in Italy this fall - Veneto, Nicola, and near San Gimignano. Any suggestions for "must see" places in these areas? Will have a car, and enjoy museums, scenery, and good food & wine. Will often eat at home, so good markets are also needed.

No idea where Nicola is, and the Veneto is HUUUGE. Can you be any more specific? Also, do you have the RS Italy book, and perhaps more specifically the Florence/Tuscany one for your time in San Gim?

Are you looking for anorexic people?
Assuming that you are referring to Nicola just inland from La Spezia then the territory you are asking about spans a triangular area from Italy's Tyrrhrenian to the northern Adriatic, and southward to central Tuscany. There are indeed many interesting things to see, do and eat within that area, so many that authors have written guide books about them. For me, and perhaps others, a significant part of taking a trip is the planning of it. If you would read through a reputable guidebook or two regarding the areas that you have in mind and then post questions here you will be amazed by how many folks with recent eyewitness experience will jump in to share with you.
