In reading the RS guide, I understand how to dial an Italian phone from my mobile (press and hold 0, country code, number)... but I was wondering - how would I text someone from my mobile to their (Italian) mobile? Do I use the same method in my texting application (iMessage on my iPhone 7+)? This just occurred to me as I was considering how I will be in contact with my Airbnb hosts (assuming I have their mobile number of course)...

Yes, texting is the same as calling when it comes to entering the phone number .
But, depending on your carrier and calling plan, there will be additional charges for the international text, or you may not be able to text at all. You will have to check with them.
