On our only trip to Rome, we arranged ahead of time for a driver to pick us up and take us straight to our bed and breakfast. We are military and booked it through the USO. However, if you research it on the web, there are several companies that are very comparable to what it will cost you to get a taxi. After a very long flight, it was well worth it to see someone standing there with our name on a card that assisted us with luggage.
Taxi stands are very easy to find at the airport. There are loads of airport employees that you can ask on the off chance you don't see the signs. Have fun!

The taxi stands at FCO are on the Arrivals level, between the B and C Terminal. If you are arriving from the States you will more than likely enter the Terminal from the "B Concourse." (C Terminal is still closed).
Once you come through the frosted sliding tours (B Terminal)into the Arrivals area... head straight out through the doors exiting the Terminal. Once on the sidewalk OUTSIDE, GO RIGHT, towards the C Terminal and you will see the Taxis lined up on the street. Go to the front of the queue, and DO NOT take offers from individuals along the way asking if you need a taxi... they are probably not metered or licensed drivers/operators!

You can also contact where you are staying. Some places arrange transfers for you from the airport to the hotel. Ours quoted us a price last Sept that we thought was too high. We took the train into Rome and got a cab from there to our hotel. The cab driver overcharged us and we landed up paying almost the amount if we had book the transfer offered from our hotel.
