We are spending a night in Naples before transferring to our hotel in Sorrento. Since our hotel is so close to Molo Beverello, we plan on walking, with our luggage, to the dock and then taking a boat. The hotel in Sorrento is near the train station, and I assume it would be a climb up to the hotel from the Marina Piccola. Are there taxis at the dock we can take to get to the hotel?

Yes there are taxis, rather expensive so don't be surprised at the cost! It was 14 euro last time we used one in 2009. There is also a bus to take you to the railway station (runs about every 20 minutes, there is a ticket booth to buy the tickets before you board) as well as a public elevator which is a less than 5 minute walk from the harbourside.

You are right to look for a way from the harbour up to the town. It is quite steep and inconvenient up the ramp.
Linda's suggestions are all good. The lift (elevator) is slightly hidden at the top, and I don't remember if it is below. People should be able to guide you to it.
