First, Florence is small and compact so the need for a taxi is limited. Second, no more difficult to deal with than another other taxi. Be sure you are using an official taxi with meter. Depending on the length of the trip, I generally will round and maybe add another euro. The standard US tip of 15 to 20% is not expected.

We found to ask the driver before you get how much to the address you are going to and found them honest as compared to Rome. They have their name and the taxi co. on the inside of the
car door and believe that incase you leave something in the taxi like I did my 1st time in Florence.

Will you need a taxi in Florence?
Doubtful, except for upon arrival or departure between the station or airport to the hotel (and viceversa).
From the airport to the city center it's a €20 flat fee plus luggage or night fees if applicable (so maybe €25-27 at most).
From the station to anywhere in the city center it won't be more than €12-15.
Other than that, I doubt you'll use a taxi at all. The historical center is a diamond shaped area 2km x 2km (1.2 miles x 1.2miles), you'll just walk most of the time.

I had planned to take a taxi from the bus station to Piazza Ciompi. Reading this thread I'm wondering if it's walkable? It is hard to tell from the map, it doesn't look far, but I know that can be deceiving sometimes! Thanks-

From the train station (I presume you talk about the SITA bus station, across the street) to Piazza dei Ciompi is one mile walk on flat terrain. If that is too much you can take a bus too (no. 6 or 14 or 23). The stop for 14 and 23 (the bus I take to my house) are on the Piazza Adua side of the train station now (exit from the side of the Pharmacy and Police station), they are both frequent (you won't have to wait longer than 1 minute before one or the other shows up). Get off at Piazza D'Azeglio and walk through via Carducci on the back of the synagogue. If you take a bus the walk from Piazza D'Azeglio to Piazza dei Ciompi is probably 1/4 of a mile top. But I would walk the mile, it's just as fast and you get to see the Duomo and Baptistry on the way there.
