I just received an email from the website from which I rented my villa stating that states that we may be levied a tax of 1-2 euros per person per night stay depending on the municipality. Is this legit? How will I know what the actual tax is since they say to pay the villa owner in cash?

That is a recent development of the last few years for a tourist lodging tax of one to two euro added after the fact. It is legit and spreading.
chris, This sort of "tax" is increasingly common throughout the world, including this area (I believe it's called a "Hotel Room Tax" here). I agree with the others, I wouldn't be too concerned with it. It's simply part of the "cost of travel". Buon Viaggio!

If you Google 'commune di CITY NAME' you might have some luck finding more info on the city where your villa rental is.
