We are doing the Sicily tour in early May with RST, really looking forward to it! My wife and I are both White Lotus fans, and we’re hoping to have a meal or drinks at the season 2 location. I know it’s a big tourist spot, partially thanks to the show, but I have tried online for the seafood restaurant and the bar and nothing is available…seems kinda early. Should I call to try for waitlist or just stop in when we are in town. We will spend 2 nights in Taormina.

I live here in Taormina and I can tell you: don't panic! You aren't seeing availability simply because it is too early.
The San Domenico Palace (and their restaurants like Principe Cerami) typically doesn't open its reservation system for non-guests until about 30 to 60 days in advance. If you try to book for May right now, the system often just shows "no availability," which makes it look like they are sold out, but they actually haven't released the tables yet.
A few tips from a local:
Wait until late March: I’d suggest checking again around the last week of March or the first week of April.
The "White Lotus" effect: Since the show, they prioritize hotel guests heavily. If you can't find a dinner spot even in April, try booking for a drink at the Bar & Chiostro instead—you still get the full atmosphere and those iconic views.
Set a reminder for late March and you should have much better luck.

Thank you Francesco for your comments. They are very helpful. We are both in our late 60s, and since retiring in 2021 we have been working to see the world we missed while working! We have been to Italy three times to see different areas, but this will be our first time in Sicily. Looking forward to seeing more of this beautiful country with so much history and good food.
