There should be a funicular leading down to the beach, at least there was when I went there. Are the hotels really booked, or their schedules haven't opened that far out?
If expense is an issue, consider Giardini-Naxos which is close by and flat (right on the beach). You can easily get to Taormina from there with a short bus ride.
You do not climb stairs in Taormina to get down to the beach. You take a cable car or drive. Locals use the cable car too.
There are a number of hotels along the SS114 down by beaches. One nice one is Mazzarò Sea Palace, but I doubt it is reasonable. It’s near the cable car station. To me, the beach in Taormina isn’t all that great. It’s all pebbles with very little sand. Back in the late 70s before it was built up and there were no hotels it was a nice place to visit, but I was disappointed when I returned a few years ago.
Just want to add: after you exit the cable car, there are still many steps to the beach (over 100). And yes, pebbly/rock beach.
