We're going to be taking the bus from Florence to an Airbnb between Greve-in-Chianti and Panzano-in-Chianti. Has anyone spent time in this area without a car? Any sense of what will be accessible by foot, or by the bus? Is there only the 365 bus that goes to and from Florence? Also, any tips from anyone who's taken this route by bus before - is the bus generally reasonably on time, etc.? Is there anywhere worth stopping on the bus route between Florence and Greve-in-Chianti for lunch?
I was fortunate in 2012 to spend four days with my aunt, uncle and cousin's in a lovely villa 15min walk from Greve.

I caught the 365 bus in and out of Florence. It's about an hour to Florence from Panzano, slightly less from Greve.

It takes a while to get out of the built up area of Florence so not really anywhere I would suggest until maybe Strada in Chianti. As far as Italy goes it was pretty much on time. The station in Florence is a little tucked away if you don't know where to go.
Did you take the bus around the area while you were there? I'm just trying to get a sense of how easy it will be to get into Greve-in-Chianti and Panzano-in-Chianti on foot or by bus. It looks like only one bus goes up and down that road, about every hour.

Once there its all walkable - they are only small towns/villages.

That's correct - along the main route 222 through Chianti from Florence.
