I've stayed at VILLA BELVEDERE a few times...great historic hotel with excellent service, view of Etna, pool...is that what you have in mind? Maybe you should give a price point....
We stayed at Villa Ducale and enjoyed it. Their breakfast was wonderful and service was excellent. We like smaller hotels so the size was nice. The hotel is located at the top of the town so they offer a free shuttle to the downtown area kr you can walk down if you prefer. They have a pool as well as beautiful views of Etna.
We really enjoyed visiting Castelmola at the top of the mountain above Taormina.
I would imagine a lot depends on your price point and priorities.
I do not recommend the Hotel Continental. It allows/encourages free passage through the guest room area for anyone coming in off the street in an effort to boost rooftop terrace business. The only theft I have seen on a Rick Steves Tour occurred in this hotel lobby.
The hotel rooms are nice, but its security is lacking.
We stayed at Casa Cifali, a small (3 or 4 rooms) B&B run by a lovely Sicilian/American couple. It is fairly basic but comfortable and conveniently located. They serve a nice breakfast on the terrace and are happy to recommend restaurants and activities. https://www.casacifali.com/
