Suggestions for parmigiano reggiano and parma ham production tours

Hi,
I will be driving from Montepulciano to Bologna on Wed June 6. Our next stops are Modena and Parma. We are staying the night in Parma but leaving on a 10 AM train to Milan.

I cannot find a dairy farm to tour on our own as well as parma ham and balsamic oil places. There are tours, but we do not have that time Any recommendations of places to stop along that route? Would love authentic tastings.

I did a tour at Giansanto, a parm company. There was a website for a consorzio (I think that was it) for parmigiano cheese makers and they list ones that do tours. I made plans ahead of time but it was me and one other couple. Not like a huge tour group and we got to see them make the cheese, and got a description of the whole process. The cheese maker only spoke Italian, but there were lots of other makers. I picked this one because it was off a Main Street and I could take the bus, but with a car you'll have more options. Sorry I can't give the website but if you google, you should find the consorzio.
