Staying one night in Tuscany

My husband and I are going to be traveling to Florence, Rome and Venice. I would like to have one night in the Tuscan hillside, hopefully at a winery or B&B on our way from Florence to Rome. I have been to Siena previously, and hoping to check out a different location. We will not be renting a car, which I know can be difficult in this area to get around. So we are looking for recommendations on a good town we can train to and spend a night. In addition, if you have any good wineries or B&B recommendations that would be helpful as well!

Both Arezzo and Cortona are interesting Tuscan cities and worth spending the night. However, staying at a winery or b&b near, but not in, one of them may not be possible by public transportation. You may find that some b&b's that are outside but near the town are willing to pick you up at the train/bus station but that's not a given and I have no personal experience with any of them.

Really hard to find a small town and find trains. A car is recommended. Maybe Cortona? Not small though.

I have two thoughts. The first is to travel from Florence to Volterra. It takes about 2 1/2 hours by combination train/bus. We just love Volterra and it looks like it would be a fun place to spend the night.

The second thought would be to take the bus from Florence to Greve, which takes 40-45 minutes. I would recommend Castillo di Verrazzano. You could have a wonderful dinner there. The problem is the rooms are down the hill from the winery. It's a little far and steep to walk. Maybe they could scoot you down to the rooms. You'd also have to take a taxi from town. Of course, there are B&B's in town and some nice places to eat in town.

Trying to stay in Tuscany without a car for just one night seems like a lot of trouble. We try to stay a minimum of three nights at any one place, preferably we like to spend an entire week in one place. One night doesn't give you any time to get a feel for the place.
