What is the suggested way to book a tour to visit the Blue Grotto and see Capri on a day trip from Sorrento in mid-June this year?

I would take the ferry on my own rather than a tour. If I just had a day trip to Capri, I would prioritize Villa San Michele and Giardini di Augusto ahead of it. The Blue Grotto is nice, but going there would eat up maybe about half your time in Capri, and you only spend about five minutes inside.
