The Westin Excelsior is probably the most famous luxury hotel in Florence, now part of the Marriott Bonvoy group. They have a famous roof top restaurant called Sesto On Arno which offers the best views of the city. Across the same piazza there is also the St. Regis Hotel, also part of Marriott. Michael Jackson used to stay at the Excelsior, Madonna preferred the St. Regis. I don't know if the St. Regis has a restaurant on the rooftop, I've been only to the Sesto On Arno.
I also like the Villa Cora Hotel. on the hill near Viale Michelangelo. A bit of a walk to downtown, but one can always take taxis.
I heard good things about Il Salviatino as well, but my only experience staying there was only when it was still the Stanford University - Florence campus about 40 years ago, but the place has been majorly remodeled since it became a luxury resort.
