Southern Italy - Suggestions needed

Last year I did the RS tour of Venice, Florence, and Rome. Next year we want to explore Southern Italy, this time on our own. We want to experience the culture and small towns; I know about the 'highlights' of the South - Amalfi Coast, Pompeii, Capri, but would like suggestions on what small, less touristy towns to visit. We plan on staying in Sorrento, as it seems well connected transportation-wise. However, can anyone recommend day-trips from Sorrento to some off-the-radar small old towns that are worth going to? Our plan is to spend a week in Sorrento and then a week in Montepulciano, which we already visited last year and have a better sense of where to go.
However, everything I read on Southern Italy always mentions those same 'highlights' or Sicily. Any small "gems" out there that you'd recommend? Thank you!

We'll be in Sorrento for 5 nights in a few weeks. We've been to Pompeii and Amalfi before. We may just chill, or we might...

--take the CV train 45 min to Naples and visit their Archeological Museum
--take the bus 40 minutes to Positano
--take the train 30 min to Ercolano for the ruins
--if the ferry is running, go over to Capri/Anacapri

Through our B&B, we're taking a cooking class at a farm at the tip of the peninsula overlooking Capri.

So...there's a lot to do--enjoy your planning!

Anacapri (while Capri is rather overrated, Anacapri seems under-appreciated)
Vietri sul Mare (close to Salerno)
Ischia (closer to Naples)
Procida (closer to Naples)
Posillipo (closer to Naples)
