Southern Italy in Feb...need to book rooms ahead?

I've been wondering if I might save a bit of money and considerably more travel flexibility if I didn't book some or all of my rooms ahead for a trip I'm planning next Feb. I'm thinking rooms should be pretty readily available at that time of year and wonder if I could employ the tactic of simply showing up at a tourist office and asking for help finding a room that will accept X Euros. Or alternatively waiting till just a week or so before leaving to contact AirBNB owners to see if their rates are lower than they are quoting now.
Any ideas about the likelihood of success...or a disaster?

Sorry...in this case Puglia and nearby plus Sicily. . I'm specifically thinking of Bari, Martina Franca, Matera, Brindisi, Lecce, Syracuse and Modica as stopping points.

I also wouldn't worry about keeping your plans flexible. Some places may be closed for winter, but not all. A car will help you access a wider variety of options.
